At Rosie Bella’s, the new Italian restaurant at 1 Southfield Avenue (former site of Scaramella’s), there’s a more authentic way to achieve that velvety texture. Here, the house-made pasta is tossed with butter, Parmigiano-Reggiano cheese, and pasta water, following the traditional Roman preparation.
